About this smoothie

Chia seeds come from a plant in the mint family native to Central America. They contain fibre and plant-based omega-3 fatty acids (alpha-linolenic acid) and can absorb many times their weight in liquid, forming a gel. That is why they thicken smoothies noticeably as they stand.

Pear and banana provide sweetness and body, blueberries colour and a fruity tartness, and yogurt adds creaminess and protein. Drink it soon after blending, or let it rest for a thicker, pudding-like texture.

Bartender tips

  • The smoothie keeps thickening as the chia swells; add water if it gets too thick.
  • Blend the chia seeds finely or soak them first for a smoother texture.

Variations

Frequently asked questions

Why does my smoothie get thicker?

Chia seeds absorb liquid and form a gel. Add a splash of water or milk to thin it.

Is this smoothie vegan?

Not with dairy yogurt. With soy yogurt it is.

Can I prepare it the night before?

Yes, but it will be very thick in the morning. Stir in some water before drinking.
