Peaches are at their best in high summer, when they are juicy and fragrant enough to sweeten a whole glass. Here they meet two of the mildest leaves you can blend: baby spinach and lamb's lettuce. Both contain folate and vitamin K and add hardly any bitterness.
The banana is only a half, enough for body without masking the peach. The result is a light green smoothie that tastes clearly of stone fruit, a good start to a warm morning or a refreshing snack in the afternoon.
