Basil Banana Smoothie with Spinach

Basil in a sweet smoothie sounds unusual, but a few leaves give ripe banana a fresh, slightly peppery perfume. Spinach and lamb's lettuce make the glass bright green.

About this smoothie

Basil is best known from Italian cooking, but its sweet, aniseed-like aroma also works well with fruit, especially with banana and strawberries. In this green smoothie two mild leafy greens, baby spinach and lamb's lettuce, supply colour without bitterness, and the banana provides all the sweetness and creaminess.

It is a simple, fully plant-based smoothie with a little more character than the usual spinach and banana blend. It suits breakfast or a light snack.

Bartender tips

  • Use only the leaves, not the stems: basil stems can taste bitter.
  • Add a squeeze of lemon if the smoothie tastes flat.

Variations

Strawberry basil
Add 80 g strawberries for a fruity pink-green twist.
