About this smoothie

Peaches are at their best in high summer, when they are soft, fragrant and dripping with juice. Ripe fruit is essential here, because peaches contribute almost all the flavour; they also provide some vitamin C.

Half a banana makes the smoothie creamy, baby spinach adds colour without much taste, and a few mint leaves bring a cool, fresh finish. It is light and vegan, a good drink for hot mornings or as a refreshing snack in the afternoon.

Bartender tips

  • Out of season, use frozen peach slices or canned peaches in juice.
  • Nectarines work just as well and need no peeling.

Variations

With raspberries
Add 50 g raspberries for a pink colour and more acidity.
