About this smoothie

Passion fruit has an intense, perfumed flavour and crunchy black seeds; together with juicy pineapple it creates a strongly tropical smoothie. Both fruits contain vitamin C. Fresh basil, better known from Italian cooking, adds a peppery, slightly aniseed note that makes the fruit taste even fresher. Because it uses water rather than milk, this smoothie stays light and is ideal on hot days.

Bartender tips

  • Blend the passion fruit only briefly to keep the seeds whole, or strain the smoothie.
  • Frozen pineapple makes it thick and icy.

Variations

Creamy version
Replace the water with coconut milk for a piña colada style glass.
