Lamb's Lettuce Smoothie with Passion Fruit

Lamb's lettuce is one of the mildest salad greens, so it disappears almost completely behind pineapple and passion fruit. What stays is a fresh green colour and a tropical, tangy taste.

About this smoothie

Lamb's lettuce, also called corn salad, is a winter green with small, tender leaves and a gently nutty flavour. Unlike kale or rocket it brings no bitterness, which makes it a good start for anyone new to green smoothies. Pineapple provides sweetness and juice, and passion fruit adds a strong perfume and a sour kick.

The smoothie is light and dairy free. It suits breakfast or an afternoon snack, especially in the colder months when lamb's lettuce is in season.

Bartender tips

  • Lamb's lettuce often hides sand between the leaves: rinse it twice.
  • Add the passion fruit at the end and pulse briefly if you want to keep the seeds whole.

Variations

Creamy version
Add half a banana for a thicker, sweeter glass.
