Method

  1. Halve the passion fruit and scoop out the pulp.
  2. Halve the avocado, remove the stone and scoop out the flesh.
  3. Wash the basil leaves.
  4. Blend everything for about 60 seconds, taste and sweeten if needed.

About this smoothie

Passion fruit, known in German as Maracuja, has a small amount of very aromatic, tart pulp with crunchy black seeds; it contains vitamin C and fibre. In this smoothie it provides most of the flavour. Avocado makes the texture creamy and adds mostly unsaturated fats, and a splash of coconut milk rounds everything off with a gentle coconut aroma. Because there is no sweet fruit such as banana, a teaspoon of honey or maple syrup can help if you prefer it sweeter.

  • Ripe passion fruit have wrinkled skin; smooth ones are often still very sour.
  • Blend briefly if you want to keep the crunchy seeds, or strain for a smooth drink.
