Honeydew melon is so juicy that it almost counts as the liquid in this smoothie. A little avocado makes it creamy, and a few rocket leaves add a subtle peppery note.

Method

  1. Peel the melon, remove the seeds and dice the flesh.
  2. Scoop the flesh from a quarter of an avocado.
  3. Wash the rocket.
  4. Blend melon, avocado, rocket, water and honey if using for about 40 seconds, then serve.

About this smoothie

Honeydew melon consists mostly of water and has a delicate, honeyed sweetness, which makes it one of the most refreshing smoothie fruits in summer. A quarter of a ripe avocado gives body and a silky texture without masking the melon. The rocket is used sparingly here, just enough to add a green, slightly peppery edge.

The smoothie is light, pale green and suits a hot afternoon or a summer breakfast. Honey is optional; a ripe melon is usually sweet enough.
