Method

  1. Halve the papaya, scrape out the seeds, peel and dice the flesh.
  2. Put papaya, yoghurt and coconut milk into the blender.
  3. Blend for about 30 seconds until smooth.
  4. Taste, add a few drops of lime juice if you like, and serve.

Papaya has soft, buttery flesh that blends into a very smooth smoothie with no fibres or seeds to bother you once the black seeds are removed. It is known as a good source of vitamin C and contains the enzyme papain. Natural yoghurt balances the mild sweetness with a little acidity, and coconut milk adds body and a gentle coconut aroma. The smoothie is a quick breakfast and also a nice, light dessert.
