Method

  1. Peel the papaya, remove the seeds and dice the flesh.
  2. Peel the banana and halve it.
  3. Rinse the basil leaves.
  4. Blend everything with coconut milk, yoghurt and water for about 40 seconds and serve.

Papaya and coconut are a natural tropical match, and basil, common in Southeast Asian cooking, suits them well. Coconut milk is made from pressed coconut flesh and is much richer than coconut water, so half of it is replaced with water here. A spoon of yoghurt adds a light tang.
