About this smoothie

Papaya is soft, sweet and mild, with a flavour somewhere between melon and apricot. It is known as a good source of vitamin C and blends into a very smooth, silky texture. Because papaya alone can taste a little flat, strawberries add freshness and acidity. A small amount of coconut milk provides creaminess and a tropical note, and a spoon of natural yoghurt adds tang.

The smoothie suits a relaxed breakfast or an afternoon break on a warm day.

Bartender tips

  • A ripe papaya is mostly yellow-orange and gives slightly when pressed.
  • A squeeze of lime lifts the mild papaya flavour.

Variations

Vegan version
Use coconut yoghurt instead of natural yoghurt.
