Method

  1. Peel the mango and cut the flesh from the stone.
  2. Scoop the avocado from its skin; peel the banana.
  3. Blend fruit, yoghurt and coconut milk for about 45 seconds until velvety.
  4. Pour into a glass and serve.

About this smoothie

Avocado and mango come from similar warm climates and work surprisingly well together: the mango brings sweetness and a sunny yellow colour, the avocado a buttery texture with very little flavour of its own.

Banana and yoghurt round the smoothie off, and coconut milk adds a light tropical note. Use the thinner coconut drink from the carton rather than canned coconut milk, which is much richer. With its fat from avocado and coconut, this smoothie is filling and makes a good breakfast on its own.

Bartender tips

  • If it gets too thick, add a splash of water rather than more coconut milk.
  • Squeeze a few drops of lime over leftover avocado to keep it from browning.
