About this smoothie

Papaya is a tropical fruit with soft, salmon coloured flesh and a mild, melon like sweetness. It is known for vitamin C and contains papain, an enzyme that is also used to tenderise meat. Freshly squeezed orange juice adds acidity and more vitamin C, and half a banana makes the smoothie thicker and creamier.

This is a light, fruity breakfast smoothie. A squeeze of lime lifts the flavour if your papaya is very sweet.

Bartender tips

  • A few drops of lime juice balance very sweet papaya.
  • Chill the fruit beforehand for a cold smoothie without ice.

Variations

With ginger
Add a thin slice of fresh ginger for a warming note.
