About this smoothie

Ripe papaya has orange flesh that blends into an almost velvety purée, which makes it a great smoothie base even without banana. Its flavour is mild and sweet, and some people find it slightly musky, which is exactly why citrus works so well with it. Both papaya and oranges are good sources of vitamin C.

The lime is not optional here: a little acidity lifts the papaya and gives the glass a fresh finish. A sunny choice for breakfast.

Bartender tips

  • A ripe papaya is mostly yellow and gives slightly to pressure.
  • Freeze the papaya chunks for a thicker, colder smoothie.

Variations

With mango
Replace half the papaya with mango for a sweeter, fuller flavour.
