Garnish: Peach or nectarine slice · Ice: Served up, no ice

Method

  1. Wash and pit the nectarine and apricot and cut them into pieces.
  2. Put the fruit into the blender with the oat milk.
  3. Blend for about 45 seconds until smooth.
  4. Pour into a glass and serve cold.

About this smoothie

Nectarines and apricots are both at their best in midsummer, when they are juicy and fragrant. Nectarine brings sweetness and juice, apricot a more intense, slightly tart aroma. Both fruits contain carotenoids, which give them their warm orange colour, and some vitamin C. Oat milk rounds the fruit off and makes the smoothie creamy without dairy.

This is an easy breakfast or afternoon smoothie. Out of season, frozen apricot and peach slices work well, and they make the drink thicker.

  • Leave the skins on; they blend well and give the smoothie its colour.
  • If the fruit is not quite ripe, add half a banana or a teaspoon of honey.
