Melon Parsley Smoothie

Parsley is more than a garnish here: its fresh, slightly peppery flavour gives sweet honeydew melon a clean, herbal edge. Spinach deepens the green.

About this smoothie

Flat-leaf parsley has a stronger, more rounded aroma than the curly kind and blends well into drinks. It is known for its vitamin C and vitamin K content. Honeydew melon is juicy and sweet, which balances the herb, and baby spinach adds colour with almost no taste of its own. The result is a very light green smoothie, good for a warm morning or as a refreshing glass after exercise.

Bartender tips

  • Parsley stems carry lots of flavour, so only remove the thick lower ends.
  • A squeeze of lemon makes the flavour brighter.

Variations

With cucumber
Add a few slices of cucumber for an even fresher, more savoury glass.
