Method

  1. Wash the spinach and parsley and shake them dry.
  2. Put the greens, matcha and cold water in the blender.
  3. Blend for about 45 seconds until no leaf pieces remain.
  4. Taste, add honey if you like, and serve immediately.

About this smoothie

Matcha is finely ground green tea, so unlike brewed tea you consume the whole leaf. It contains caffeine, roughly comparable to a cup of green tea at this amount, and gives the drink its deep colour and gentle bitterness. Spinach is mild in flavour and adds volume, while parsley brings a fresh, herbal edge.

Because it contains no fruit, this smoothie has very little sugar. It works as a morning pick me up; add a teaspoon of honey if you find it too austere.

  • Sift the matcha or blend it first with a little water so it does not clump.
  • Half a frozen banana turns it into a sweeter, creamier drink if the pure version is too green for you.
