Spinach Smoothie with Parsley and Cucumber

Cucumber makes this green smoothie taste like a cold glass of garden. It is watery, crisp and far less intense than smoothies with stronger greens.

About this smoothie

Cucumber consists mostly of water, which is why it tastes so refreshing and blends so easily. Together with mild baby spinach and aromatic parsley it makes a light vegetable drink with very little sugar.

The smoothie is a good option on hot days or as a savoury drink with lunch. A pinch of salt and a few drops of lemon juice turn it almost into a cold soup, while a green apple takes it in a fruitier direction.

Bartender tips

  • Chill the cucumber beforehand; it makes ice unnecessary.
  • A squeeze of lemon and a pinch of salt sharpen the flavours.

Variations

Apple cucumber
Add half a green apple for a sweeter, fruitier green smoothie.
