Crisp lettuce is mostly water and tastes clean and cool, so it makes a surprisingly refreshing base. Spinach adds colour, lemon the necessary freshness.

Method

  1. Wash the lettuce and spinach and shake them dry.
  2. Tear the lettuce leaves into pieces.
  3. Blend leaves, lemon juice, water and honey if using for about 45 seconds.
  4. Serve immediately, ideally over a few ice cubes.

About this smoothie

This is one of the lightest green smoothies possible. Lettuce consists largely of water and has a mild, fresh flavour, while baby spinach contributes a deeper green colour, vitamin K and folate. Lemon juice gives the drink its lively acidity, and a little honey is optional for balance.

Without fruit the smoothie is closer to a green juice than a creamy shake. It is best very cold on a hot day or as a small glass before a meal.
