Method

  1. Wash the lettuce and parsley and shake them dry.
  2. Tear the lettuce into pieces.
  3. Blend leaves, water and, if you like, lemon juice and honey for about 45 seconds.
  4. Serve very cold.

Lettuce consists mostly of water and has a clean, mild taste, which makes it a gentle base for a green drink. Flat-leaf parsley brings the flavour: fresh, green and slightly peppery. Parsley is a good source of vitamin K. A little lemon juice and honey are optional but make the drink more rounded.

This is a very light, savoury smoothie rather than a sweet one. It suits a hot day or a small glass before lunch.
