Lamb's Lettuce Kiwi Smoothie with Coconut Oil

Half a banana and a teaspoon of coconut oil make this green smoothie noticeably rounder and creamier. Kiwi keeps it fresh, the lettuce keeps it light.

About this smoothie

A small amount of fat in a green smoothie is a common practice: fat-soluble vitamins such as provitamin A from leafy greens are better absorbed together with some fat. Coconut oil also adds a gentle coconut aroma.

Lamb's lettuce stays mild and slightly nutty, the banana brings sweetness and body, and kiwi adds acidity. The result is a green smoothie that feels creamy without any dairy.

Bartender tips

  • Blend the coconut oil with the other ingredients straight away; added to very cold liquid alone it can form small flakes.
  • Use virgin coconut oil for aroma, or deodorised oil if you want no coconut taste.

Variations

With avocado
Replace the coconut oil with a quarter of an avocado for an even creamier texture.
