About this smoothie
Kiwis are known for their high vitamin C content and a tart, fresh flavour that goes well with the mild sweetness of coconut water. A teaspoon of coconut oil adds a subtle coconut aroma and a rounder mouthfeel. Lamb's lettuce and baby spinach are both very mild greens, so they mainly add colour.
Half a banana is enough to balance the kiwi. The smoothie is light and refreshing and suits breakfast or a post workout drink.
Bartender tips
Coconut oil sets in cold liquid and can leave small flakes. Melt it gently and pour it in while the blender is running, or use room temperature ingredients.
Do not blend for too long: crushed kiwi seeds can make the smoothie bitter.

Without coconut oil
Leave out the oil and use 50 ml coconut milk instead of the same amount of coconut water.
