About this smoothie

Lamb's lettuce, also called corn salad, is a winter salad green in much of Europe. Its small, tender leaves blend easily and taste mild, which makes them a good alternative to spinach in green smoothies. It contains vitamin C and provitamin A, among other nutrients.

Kiwi adds tang and more vitamin C, and coconut water softens the edges with a light sweetness. A refreshing, very light smoothie for mornings or between meals.

Bartender tips

  • Lamb's lettuce often holds sand between its leaves: wash it in a bowl of water two or three times.
  • For more sweetness, add half a banana or a few grapes.

Variations

Creamy version
