Courgette Apple Smoothie

Raw courgette in a smoothie sounds unusual, but its taste is so neutral that the apple takes the lead. What the courgette adds is a soft, creamy body.

About this smoothie

Young courgettes have a very mild, slightly nutty flavour and a tender skin, so they can be blended raw without peeling. They add volume and a light creaminess without much taste, which is why they are a popular trick for getting more vegetables into smoothies. The red apple brings sweetness and fruitiness, and a little lemon juice keeps the flavour fresh. The drink is vegan, light and without added sugar, a good everyday smoothie.

Bartender tips

  • Use small, young courgettes; large ones can be watery or slightly bitter.
  • If a raw courgette tastes bitter, do not use it: bitterness in courgettes can indicate unwanted compounds.

Variations

Greener version
Add 20 g baby spinach for a deeper green colour.
