Pear and Lemon Smoothie

Lemon wakes up the soft, floral sweetness of a ripe pear. Half an apple adds crispness, and the whole thing tastes a bit like a liquid pear sorbet.

About this smoothie

Pear and lemon are a well known pairing from desserts and preserves, where the acidity of the lemon brings out the delicate pear aroma. In this smoothie a ripe pear gives body and sweetness, half a red apple adds crispness, and fresh lemon juice provides a clear, bright acidity. Lemons are well known for their vitamin C.

The smoothie is vegan and light. It works well in the morning or as a refreshing glass on a warm afternoon.

Bartender tips

  • Start with less lemon juice and add more to taste; lemons vary a lot in acidity.
  • Add a little finely grated lemon zest for a stronger citrus aroma.

Variations

With ginger
Blend in a thin slice of fresh ginger for a spicy kick.
