About this smoothie

Passion fruit has an intense, floral and sour aroma that dominates any drink it touches, which is exactly the point here. It turns a simple apple and pear base into something tropical. Its edible black seeds add a little crunch and fibre.

With coconut water instead of milk, the smoothie is light and refreshing, ideal after sport or on a hot afternoon. Chill all the ingredients beforehand or blend in a few ice cubes.

Bartender tips

  • Wrinkled passion fruits are the ripest and most aromatic.
  • Keep the coconut water in the fridge overnight for the best chill.

Variations

Creamy version
Replace the coconut water with coconut milk for a richer drink.
