Blood orange gives this smoothie its deep ruby colour and a citrus flavour with hints of raspberry. Strawberries add aroma, and a ripe pear rounds off the acidity.

Taste
Juicy and tangy with berry-like citrus, a soft pear sweetness and a light body.
About this smoothie
Blood oranges get their red flesh from anthocyanins, the same natural pigments found in berries, which develop when the fruit experiences cool nights. Their season runs roughly from December to April, mostly with fruit from Sicily and Spain. Compared with ordinary oranges they taste a little less sharp and more berry-like. Like all citrus fruit they are known for vitamin C.
Pear and strawberries soften the citrus and add body. A fresh, dairy-free smoothie for winter and early spring mornings.
Bartender tips
Filleting the orange removes pith and membranes and keeps the smoothie from turning bitter.
Frozen strawberries work well, since blood oranges and fresh strawberries rarely share a season.
Variations
Blood orange ginger
Add a thin slice of fresh ginger for a warming note.
