Blackberry Lamb's Lettuce Smoothie with Mango

Ripe mango does the heavy lifting here, sweet and thick, while blackberries cut through with a tart edge. The lamb's lettuce stays almost invisible in the taste.

About this smoothie

Lamb's lettuce, also called corn salad, has small, tender leaves with a mild, slightly nutty flavour. That makes it a gentle alternative to spinach in smoothies, especially next to strong fruit.

Mango brings a thick, almost creamy texture and plenty of natural sweetness; it is also a good source of vitamin C. Blackberries add colour, fibre and acidity to keep the mango from tasting flat. Mixed with water, the smoothie stays light and vegan. Enjoy it for breakfast or as a snack.

Bartender tips

  • Lamb's lettuce often hides sand; wash it in a bowl of water rather than just under the tap.
  • Frozen mango chunks make the smoothie colder and thicker.

Variations

With spinach
Swap the lamb's lettuce for the same amount of baby spinach.
