Banana Apricot Smoothie

Ripe apricots taste of early summer: sweet, a little tart and very fragrant. Banana makes them creamy, and a few mint leaves keep the smoothie fresh.

About this smoothie

Fresh apricots have a short season in early to mid summer, and a smoothie is a good use for very ripe, soft fruit. Their skin is thin, so there is no need to peel them. Banana adds body and balances the acidity, fresh mint adds a clean finish.

Apricots are known to contain beta-carotene. The smoothie fits breakfast or a light afternoon snack on a warm day.

Bartender tips

  • Only fully ripe apricots have enough flavour; firm ones taste sour and dull.
  • Out of season, use canned apricots in juice and drain them.

Variations

Apricot nectarine
Replace one apricot with half a nectarine for a juicier smoothie.
