Avocado Yoghurt Smoothie with Soy Milk

A whole avocado makes this smoothie almost spoonable, rich and velvety like a milkshake. Soy yoghurt and soy drink keep it fully plant based.

About this smoothie

Avocado smoothies are popular in many parts of the world; in Indonesia and Vietnam, for example, blended avocado drinks are a well-known sweet treat. This version is vegan: soy yoghurt adds a gentle tang, soy drink brings plant protein and a neutral flavour. Avocado contributes mainly monounsaturated fats, which makes the drink filling. Half a banana provides the sweetness. It is well suited as a breakfast or a substantial snack.

Bartender tips

  • The avocado must be really ripe; unripe fruit tastes grassy and blends poorly.
  • Too thick? Add soy drink in small splashes.

Variations

With lime
A little lime juice and zest make it fresher and keep the green colour.

Frequently asked questions

Is the smoothie vegan?

Yes, all ingredients are plant based.

Does it taste of avocado?

Only mildly. The banana and yoghurt dominate; avocado mostly gives texture.

Can I prepare it ahead?

It is best fresh because avocado browns. With lime juice it keeps a few hours in a closed jar.
