Avocado Banana Smoothie with Coconut Oil

Avocado and banana alone make a remarkably creamy smoothie. A teaspoon of coconut oil adds a subtle tropical aroma that ties the two together.

Method

  1. Halve and pit the avocado and scoop out the flesh.
  2. Peel the banana and cut it into pieces.
  3. Melt the coconut oil briefly so it does not form flecks in the cold smoothie.
  4. Blend everything with the water for about 45 seconds, taste, sweeten if needed and serve.

Taste

Rich, velvety and mildly sweet, with ripe banana and a delicate coconut note.

About this smoothie

This smoothie relies entirely on texture: avocado and banana both blend into a thick, velvety drink without any dairy. Coconut oil contributes a delicate coconut flavour; the original recipe used two tablespoons for two glasses, which is quite a lot of fat, so we suggest one teaspoon per glass.

The result is rich and filling, more of a small meal than a light drink. Banana provides the sweetness, avocado mostly unsaturated fat. Vegan and quick, it suits breakfast or a snack after exercise.

Bartender tips

  • Pour the melted coconut oil in while the blender is running for an even texture.
  • Use coconut drink instead of water for a stronger coconut flavour without the oil.

Variations

With spinach
Add 20 g baby spinach for a brighter green colour.

Frequently asked questions

Is this smoothie vegan?

Yes, if you use agave syrup rather than honey.

Can I leave out the coconut oil?

Yes, it is mainly for flavour; the smoothie is creamy without it.

Why does the coconut oil form small flakes?

It solidifies in cold liquid; melting it and adding it while blending helps.
