About this smoothie

Without any fruit apart from avocado, this smoothie leans towards the savoury side, a little like a chilled soup you can drink through a straw. Rocket gives a mustardy bite, avocado a buttery body. Chia seeds add fibre and thicken the drink slightly as it stands.

Coconut water contains natural sugar and some potassium and provides the only sweetness here. A squeeze of lime lifts everything. Try it as a light lunch or a mid-afternoon snack.

Bartender tips

  • Add a pinch of salt for a more savoury, gazpacho-like version.
  • Let it rest 5 minutes if you want the chia to thicken it.

Variations

Sweeter version
Add half a green apple to bring more fruitiness.
