About this smoothie

Dandelion leaves are a traditional wild green with a clear bitter taste, rocket adds a peppery bite, and baby spinach contributes mild volume. Avocado brings creaminess and unsaturated fats, which makes this green drink more substantial than a smoothie made only of leaves.

Without any fruit it tastes almost like a cold, drinkable soup. A little lime juice and a pinch of salt make it even better. If you prefer something sweeter, add half a green apple.

Bartender tips

  • Young dandelion leaves are much milder than old ones.
  • A pinch of salt and some lime juice round off the savoury taste.

Variations

Fruity green
Add half a green apple or pear for a sweeter smoothie.
