About this smoothie

This smoothie combines three quite different flavours: buttery avocado, sweet and fragrant nectarine and peppery arugula. Avocado contributes monounsaturated fat and creaminess, nectarine juice and some vitamin C, and arugula, like other leafy greens, folate and vitamin K.

It makes a satisfying breakfast or light lunch, especially in summer when nectarines are ripe and aromatic. If you are new to arugula in smoothies, start with a smaller amount; it is peppery rather than bitter, but the flavour is distinct.

Bartender tips

  • A squeeze of lime juice keeps the colour fresh and balances the pepperiness.
  • Use a very ripe nectarine; the smoothie relies on it for sweetness.

Variations

Milder green
Replace the arugula with baby spinach for a softer, more neutral flavour.
