About this smoothie

Parsley is one of the easiest herbs to use in green smoothies, because the sweet fruit keeps its herbal edge in check. Flat-leaf parsley has a milder, rounder flavour than the curly kind and blends more smoothly. Parsley is known to contain vitamin K and vitamin C.

The pear adds juice and a soft, grainy sweetness, the canned mandarins bring citrus and their own syrup. The result is a light drink that fits breakfast or a mid-morning break.

Bartender tips

  • Start with a smaller amount of parsley if you are new to herbs in smoothies.
  • A very ripe pear gives enough sweetness to balance the herbs.

Variations

With mint
Swap half of the parsley for fresh mint leaves for a cooler finish.

Frequently asked questions

Can I use curly parsley?

Yes, but it tastes stronger and more bitter. Use a little less.

Do I need to peel the pear?

No. Wash it well; the skin blends in with a good blender.

Is it suitable for children?

The parsley flavour is mild, so many children like it; start with less herb.
