Nectarine Smoothie with Parsley

Parsley gives this nectarine smoothie a fresh, green edge that stops it tasting like plain fruit purée. The pear adds juiciness and softness.

About this smoothie

Ripe nectarines bring sweetness and a peach like aroma, while half a pear makes the smoothie juicier and smoother. Flat-leaf parsley is a common green smoothie herb: it tastes fresh and slightly peppery and contains vitamin K and vitamin C.

The colour ends up a warm golden green. The smoothie is light and fruity and suits breakfast or a summer afternoon. Start with a smaller amount of parsley if you are unsure.

Bartender tips

  • Use the thin parsley stems too; they have plenty of flavour.
  • A squeeze of lemon brightens the taste.

Variations

With spinach
Replace half the parsley with baby spinach for a milder smoothie.
