Pear Persimmon Smoothie with Parsley

Parsley might sound like an odd partner for sweet fruit, but it works like a squeeze of lemon: it freshens everything up. Persimmon and pear provide plenty of natural sweetness.

About this smoothie

Flat-leaf parsley is one of the most useful herbs for green smoothies. It is a good source of vitamin K and vitamin C, and its fresh, slightly peppery taste balances very sweet fruit.

Persimmon is the main fruit here: when ripe it is soft, honey-sweet and rich in beta-carotene. Half a pear adds juice and a lighter, floral note. The colour turns a warm olive gold, and the taste is sweeter than it looks. A good autumn smoothie for breakfast.

Bartender tips

  • Start with a small amount of parsley and add more to taste, as it can dominate quickly.
  • A squeeze of lemon juice brightens the flavour and the colour.

Variations

With spinach
Replace half the parsley with baby spinach for a milder green note.
