Spinach Smoothie with Parsley and Green Apple

A green apple is the easiest way to make a leafy smoothie taste good. Its sharp acidity and light sweetness carry the spinach, and parsley adds a clean herbal note.

Tart and crisp, with apple freshness up front and a grassy, herbal finish.

About this smoothie

Green apples such as Granny Smith are among the tartest apple varieties and keep their fresh taste when blended. Spinach contributes colour and volume with little flavour of its own, and parsley brings a fresh, slightly peppery herb aroma.

This is a good first green smoothie: fruity enough to drink easily, but clearly green. It fits a light breakfast or an afternoon drink and needs nothing but a blender and five minutes.

Bartender tips

  • A few drops of lemon juice keep the colour bright green.
  • For a sweeter result use a Pink Lady or Gala instead of Granny Smith.

Variations

Creamy version
Add half a banana for a softer, sweeter and thicker smoothie.

Frequently asked questions

Is this smoothie vegan?

Yes, it contains only greens, apple and water.

Can I use curly parsley?

Yes, though flat-leaf parsley tastes more aromatic and is easier to blend.

Can I prepare it in advance?

It is best fresh. Lemon juice helps if you want to keep it a few hours in the fridge.
