Method

  1. Rinse the spinach and cucumber; cut the cucumber into chunks, leaving the peel on if it is organic.
  2. Peel the kiwi and quarter it.
  3. Squeeze the lime and add all ingredients to the blender with the water.
  4. Blend for about 45 seconds until smooth, taste and add honey if needed, then serve.

Cucumber is mostly water, so it gives a green smoothie volume and a cool, clean taste without much sugar. Baby spinach is the mildest leafy green and hardly shows up in the flavour, only in the colour.

Kiwis are known for being rich in vitamin C and add a gentle sweetness, while lime juice keeps everything bright. The original recipe used the juice of three limes for two glasses, which is quite sharp; one lime per glass is a friendlier starting point. Good on a warm morning or after exercise.
