About this smoothie

Apricots have a short season in early summer, and ripe ones are soft, fragrant and slightly tart. They are known for their beta-carotene, which gives them their orange colour. Here they bring freshness to the creamy combination of banana and baby spinach, a classic in green smoothies because the banana covers the mild spinach so well.

The smoothie is plant based and light, a good breakfast glass in apricot season.

Bartender tips

  • Out of season, use dried apricots soaked in warm water for 10 minutes.
  • Ripe apricots give slightly when pressed and smell sweet.

Variations

Apricot yoghurt
Replace half the water with natural yoghurt for a creamier version.
