Spinach Apricot Smoothie

Ripe apricots have a honeyed, slightly tart flavour that stands up well to spinach. With half a banana for body, this green smoothie tastes clearly of summer fruit.

About this smoothie

Apricots are in season for only a few weeks in early summer, and that is the time to make this smoothie. Ripe apricots are sweet with a light acidity and blend smoothly, skin and all. Baby spinach adds green colour with little flavour, and the banana brings creaminess. Apricots are known for their beta carotene. A light, fruity choice for breakfast or a warm afternoon.

Bartender tips

  • Apricots that are still firm taste sour and dull; wait until they are soft and fragrant.
  • Outside the season, use four to five dried apricots soaked in water for an hour.

Variations

Apricot yoghurt
Replace half the water with natural yoghurt for a creamier version.

Frequently asked questions

Is it vegan?

Yes, all ingredients are plant based.

Can I use canned apricots?

Yes, drain them well. The smoothie will be sweeter, so you do not need any sweetener.
