Pear Hazelnut Smoothie with Coconut Milk

Pear and hazelnut is a pairing from the pastry kitchen, and in a smoothie it tastes almost like a pear tart. Coconut milk makes it creamy and rounds off the nuttiness.

About this smoothie

Pears and hazelnuts are both at their best in autumn and have been paired in cakes and tarts for a long time. Blended with coconut milk they make a mellow, nutty smoothie. Hazelnuts contribute vitamin E and healthy fats, pears fibre and natural sweetness.

Blanched (peeled) hazelnuts blend more smoothly and taste milder than nuts with skin. Soak them for 30 minutes if your blender is not very strong. A good breakfast smoothie for a cool morning.

Bartender tips

  • Toast the hazelnuts briefly in a dry pan for a deeper, roasted flavour; let them cool before blending.
  • A pinch of cinnamon makes it taste even more like pear tart.

Variations

Chocolate pear
Add 1 tsp cocoa powder for a pear and chocolate version.
