Method

  1. Wash, core and quarter the pear and peel the ginger.
  2. Melt the coconut oil gently.
  3. Blend pear, ginger and coconut oil with the coconut water first.
  4. Add the cold water, blend for about 45 seconds and pour into a glass.

Light and smooth, with soft pear sweetness, a warming ginger bite and a mild coconut finish.

Fresh ginger gives this smoothie a pleasant warmth that builds slowly on the palate, and the ripe pear softens it with plenty of natural sweetness. Coconut water is light and slightly sweet; it contains potassium and makes a good base for fruit drinks. The coconut oil mostly adds flavour and a fuller mouthfeel.

This is a light smoothie for the morning or after a walk. Coconut oil solidifies below about 24 degrees, so melt it first and blend it with the lukewarm water or pear before adding anything very cold, otherwise small flakes remain.

  • Use young ginger if you can find it; it is juicier and less fibrous.
  • Add the coconut oil before the cold liquid, so it emulsifies instead of forming flakes.
