About this smoothie

Fresh ginger has a sharp, warming heat that comes from compounds called gingerols, and it pairs naturally with sweet, soft pear. Mint adds a cool contrast, so the smoothie tastes spicy and fresh at once. The pear supplies all the sweetness plus some fibre.

This is a light smoothie for the morning or a lift in the afternoon. The amount of ginger is up to you: about 1.5 cm gives a clear heat, so start with less if you are sensitive to spice.

Bartender tips

  • Scrape ginger with the edge of a teaspoon; it removes the skin with very little waste.
  • If it is too spicy, add half a banana or a little more pear.

Variations

With apple
Replace the pear with a crisp apple for a tarter, more refreshing version.
