Pear Avocado Smoothie with Yoghurt

Taste

Very creamy and smooth, mildly sweet from the pear, with a light yoghurt tang.

About this smoothie

Ripe pears bring juicy sweetness, avocado a velvety texture and mostly unsaturated fats, and a little natural yoghurt adds freshness and a light acidity. The result is creamy and mild, with no strong flavours competing.

Because of the avocado and yoghurt it is quite filling, which makes it a good breakfast or post-workout snack. The pale green colour is prettiest when the smoothie is served fresh. A squeeze of lemon helps it stay green a little longer.

Bartender tips

  • A few drops of lemon juice keep the colour fresh and add brightness.
  • Use a very ripe pear: it makes the smoothie sweeter and creamier.

Variations

Ginger version
Add a small slice of fresh ginger for a warming note.

Frequently asked questions

Can I make it vegan?

Yes, use plant-based yoghurt and agave syrup.

Can I prepare it ahead?

It is best fresh; the avocado slowly darkens. Covered in the fridge, it keeps a few hours.

Can I use milk instead of water?

Yes, it will be even creamier and more filling.
