Pear and Melon Smoothie with Rocket

Sweet melon and juicy pear meet a small amount of peppery rocket. The contrast works like melon with prosciutto: sweet and savoury in balance.

About this smoothie

Honeydew melon has a pale green, very juicy flesh with a mild, honeyed sweetness and a high water content, which makes it ideal for light, refreshing smoothies. The pear adds body and a soft sweetness, and rocket brings a mustardy, peppery spice plus vitamin K. Used sparingly, it gives the smoothie character without making it taste like salad. A good choice for anyone who finds pure fruit smoothies too sweet.

Bartender tips

  • Use young rocket leaves; large ones can be quite bitter.
  • If it is too spicy, add more melon or half a banana.

Variations

With baby spinach
Replace the rocket with baby spinach for a milder version.
