Method

  1. Peel the papaya, scoop out the black seeds and cut the flesh into chunks.
  2. Wash, core and quarter the apple half.
  3. Blend papaya, apple, yoghurt and cold water for about 45 seconds.
  4. Pour into a jar or glass and serve at once.

About this smoothie

Papaya is grown throughout the tropics and is one of the easiest fruits to blend, because ripe flesh is almost as soft as a purée. It is rich in vitamin C and contains carotenoids, which give it its orange colour. Its flavour is mild and slightly musky, so a little apple and yoghurt help to freshen it up.

This smoothie is a good breakfast or afternoon drink. A ripe papaya has mostly yellow skin and gives slightly under pressure; green, hard fruit tastes bland and should ripen a few days first.
