Mild and fruity, with sweet apple in front, a soft creaminess and only a hint of green.
About this smoothie
Apple and spinach is probably the most common green smoothie combination, and for good reason: the apple's sweetness hides the green taste almost completely, and baby spinach is tender enough to blend without fibres.
Spinach contains vitamin K and folate, and apples add fibre. The yogurt softens any remaining edges and adds a little protein. The result is a mild, bright green drink that works well for breakfast.
Bartender tips
Put the spinach in first, close to the blades, so it blends completely.
A squeeze of lemon keeps the colour bright if you take it with you.
Variations
Vegan version
Use soy yogurt instead of natural yogurt.
Frequently asked questions
Can I taste the spinach?
Hardly. The apple and yogurt dominate the flavour.
Can I use frozen spinach?
Yes, a small portion of frozen leaf spinach works and makes the smoothie colder.
Can I prepare it the night before?
It keeps in a closed bottle in the fridge until the next morning; shake before drinking.
