Lamb's Lettuce Papaya Smoothie with Lime

Ripe papaya is soft, sweet and almost buttery, which makes it a gentle partner for lamb's lettuce. A squeeze of lime wakes up the flavour.

About this smoothie

Papaya has a mild, musky sweetness that many people find a little flat on its own, which is why it is traditionally served with lime. In this smoothie the lime does the same job, while lamb's lettuce adds a nutty green note and fresh colour.

Papaya is well known as a source of vitamin C, and lamb's lettuce provides folate. The combination is light and easy to drink, a good choice for breakfast or a mid morning break.

Bartender tips

  • A ripe papaya has yellow orange skin and gives slightly under the thumb.
  • Remove all the papaya seeds; they taste peppery and bitter when blended.

Variations

Tropical creamy
Add a few chunks of mango or half a banana for a thicker, sweeter smoothie.

Frequently asked questions

Can I use spinach instead of lamb's lettuce?

Yes, baby spinach works just as well and is equally mild.

Is it vegan?

Yes, it contains only fruit, leaves, lime and water.

Why add lime?

Papaya can taste flat on its own; the acidity of the lime brings out its fruitiness.
