About this smoothie

Dandelion has long been eaten as a spring salad leaf in many European countries, and young leaves are the mildest. They taste pleasantly bitter, similar to rocket or chicory. Baby spinach adds a soft, neutral green, and citrus juice brings freshness and some vitamin C. The drink is thin and light rather than creamy, more like a green juice. It is a good choice for people who like green smoothies with less sweetness.

Bartender tips

  • Only pick dandelion away from roads and dog walking areas, or buy it at a market.
  • If the bitterness is too strong, add half a banana or a little more orange juice.

Variations

Fruity version
Add half an apple for more sweetness and body.
